Fresh Apricot Jam

  • 1.5 kg fresh apricots
  • 300ml water
  • 1.5 kg sugar
  • Method

    Wash the fruit, only if necessary and the dry, halve and remove the stones.

    Place the fruit with the water in a deep pan.

    If adding kernels add two or three into the fruit and water.

    Simmer until the fruit is tender and the water reduced by about one third.

    Add the sugar and stir until completely dissolved.

    Bring back to a boil and fast boil until setting point is reached.

    Pot into warm jars.
