Cheesy Vegetarian Scotch Eggs
Heat about two tablespoons oil in a large saucepan and saute the carrots, celery and onion until soft.(Do not brown the vegetables just sweat them)
Remove from the heat and add the cashew nuts, mustard powder, chives, Cheddar and some seasoning. Mix well.
Take the hardboiled eggs and roll in flour, now mould the cashew mix around each egg.
If possible chill the covered eggs for about 1 hr to set the cheese.
Dip each covered egg into the beaten egg wash and roll in breadcrumbs.
Deep fry the Scotch eggs one or two at a time in hot oil for about 5 minutes or until golden brown.
Leave to cool a little before cutting in half.
